Watco Dark Walnut Danish Oil and some shellac matches the finish so well it's indistinguishable from the older parts in person.

This site was neglected for nearly three years so I can provide a status update on the desk.  The repaired panel is still flat and the colour match is still perfect!

Now the panel is flat but the hinges aren't going to go back on tightly with those nasty looking screw holes.  The holes were filled with putty then some veneer was cut out and glued into the hinge mortise.

Let's finally finish posting this drop leaf desk repair.  The following pictures show the panel being flattened.  The panel had a good bit of cup to it after it split apart and the two matign pieces weren't perfectly aligned during the glue up either.
